Something I made : Ravioli Soup !

I had a friend coming over for lunch today and I'd promised him Italian. I guess he's never had this, but he did say it was tasty!

I'm giving you the secret recipe for it!

Use it carefully :P

Ingredients :

For Ravioli :

3/4 tbsp Olive oil
60 g maida
a pinch of salt
4-5 tbsp Water.


Filling :

1 tsp Olive oil
100g Spinach
1/4 tsp Oregano
1/2 tsp Basil
1/2 tsp Pepper
1/4 tsp Salt
1 tsp Maida
50 g Paneer

For Soup :

3 cubes Maggi Vegetable Magic Masala
6 cups Water
3 tbsp Spring Onion (Chopped)
3 tbsp Mushroom (Sliced)
or 
3-4 pieces Baby corns (Sliced)
Salt and Pepper to taste.

Garnish :

2 tbsp Olive oil
2 cloves Garlic
2 slices made into Breadcrumbs

Now that you've got that fairly extensive ingredient list, what are you gonna do?

Work step by step!

For Ravioli Dough :

  1. Clean the slab properly and wipe it dry.
  2. Place all the Maida in a heap and make a small well in it.
  3. Pour the oil and salt into it.
  4. Mix with a light hand.
  5. Now putting little bit water at a time mix the dough.
  6. Keep kneading properly till all the powdery stuff becomes a ball.
  7. I kneaded it a lot till the dough became as smooth as a baby's bum :P
  8. The kneading is the key. It has to have a slight "pull" to it wothout breaking.
  9. Cover with a moist cloth and keep aside. 


For Filling :



  • Snip the Basil and Spinach with kitchen scissors. You can chop too, but I LOVE snipping all leafy stuff.



  • Saute the Spinach in the olive oil till its wilted and almost dry.
  • Add seasonings.
  • Add the crumbled paneer and maida.

I'm making paneer side by side :P
  • The filling should be quite dry. (Not oily/wet)



For Ravioli :

  • Divide the pasta into two lumps.
  • Roll out the Pasta as thinly as possible into a rough rectangle. Divide into strips.

  • Place a small ball of filling in intervals of 1 inch or so.


  • Run a dampened pastry brush or a wet finger around the ball of filling.


  • Place another strips over it and press in a criss cross fashion around it.

  • Cut the Ravioli into squares.


 For Soup :


  • Put the water into a pan with the Maggi cubes and bring to boil.
  • Add the chopped spring onions, mushroom or baby corn and ravioli and bring to a boil.




  • Season with pepper and salt.


For the Garnish :
  • I toast a few breadcrumbs with grated garlic. I sprinkle that over every bowl :)
CAUTION:  /please
  • Never reduce the heat or the Ravioli shall burst. /floor
  • Also If you want to reheat, do it in the microwave.


This recipe is really really easy.
I could make it within 30-40 minutes at home. 

Its a very very light soup and goes well as a starter. My personal favourite :P

    You can also fill mince inside the ravioli and use chicken stock for the soup :)
